Lipstick on a pig

Or as I sometimes call it Mac-a-laya.  Low budget fanciness.

When you have a few nice ingredients and a few crappy ones you have to make the best of it.

I came up with this recipe in College.  My friend Tony and I would eat this steady.

What do you need?

  • A box of White Macaroni & Cheese
  • Some sausage links
  • Cayenne pepper
  • Oregano
  • Garlic
  • A sweet onion
  • A bit of Olive Oil
  • Little bit of Milk
  • Scoop of butter

Start off by squeezing your garlic through a press. Or chop it. Whatever you prefer.


Chop up some onions.   Toss them into a pan, i prefer cast iron.  Mix up the cayenne, garlic, onions, olive oil, and your chopped up sausage.  Let it cook.

You can now start your Mac & Cheese. Get the water going and wait for it to boil. Wait. A little longer.  The only thing I could have done with this particular instance is use a different (and imho) a better White Macaroni & Cheese.  But what can I say. This was all I had.


Caramelized onions are my favorite. Love them.


Once you see bubbles toss in your pasta.  Mix it around once in a while. Not too often though  you aren’t churning butter.


Once it has cooked you want to strain it and then toss it in with the sausage mix. Be careful mixing it all up you don’t want noodles on the floor.


Sometimes you don’t have everything you’d want in your kitchen. Living in a house with kids you never know what will be in the fridge when you open it.

My wife hates this. She will not go near it, lol.

This looks pretty good though eh? Add a little fresh Parmesan cheese and you have officially put Lipstick on a Pig.  Get it? Cause the sausage is pork.
